Cucumber & Yoghurt Dip
Ingredients
• ½ cucumber, peeled and grated
• 200g/7oz Greek yoghurt
• 1 garlic clove, crushed
• ½ lemon, juice only
• 1 tbsp fresh mint, chopped
Method
1. Gather the grated cucumber in your hands and squeeze to remove the excess water.
2. Place the cucumber in a bowl. Add the yoghurt, garlic, lemon juice and mint and stir well.
3. Serve the dip with raw vegetables or savoury biscuits.
