Cucumber Salad

  • ½ cucumber
  • 2 tbsp Greek-style yoghurt
  • handful of mint, shredded
  • salt and freshly ground black pepper
  • squeeze of lemon juice
Method
  1. Slice the cucumber with a mandolin or as thin as possible using a knife.
  2. Place in a mixing bowl. Add the other ingredients and stir well to combine.
  3. Serve cold.
