Fried Aubergine
- 2 aubergines
- vegetable oil for frying
- 5 to 6 tablespoons milk
- 50g (2 oz) plain flour
- bunch parsley, chives and tarragon, chopped finely
Method
- Peel the aubergines, cut lengthways in long strips.
- Sprinkle with salt, leave for 30 minutes, rinse and pat dry.
- Heat the oil to 190 C / 375 F.
- Dip the strips in the milk then pull through the flour.
- Fry until the strips are golden all over, drain and sprinkle with salt.
- Garnish with the herbs and serve as soon as possible.
