Fried Aubergine

  • 2 aubergines
  • vegetable oil for frying
  • 5 to 6 tablespoons milk
  • 50g (2 oz) plain flour
  • bunch parsley, chives and tarragon, chopped finely

Method

  1. Peel the aubergines, cut lengthways in long strips.
  2. Sprinkle with salt, leave for 30 minutes, rinse and pat dry.
  3. Heat the oil to 190 C / 375 F.
  4. Dip the strips in the milk then pull through the flour.
  5. Fry until the strips are golden all over, drain and sprinkle with salt.
  6. Garnish with the herbs and serve as soon as possible.
