Spanish Style Peppered Potatoes

Ingredients

  • 700g / 1 1/2lb potatoes, peeled and diced.
  • Same amount of marinated peppers
  • Teaspoon smoked paprika.
  • Teaspoon finely chopped red chilli.
  • Salt and pepper to taste.

Method

  1. Parboil the potatoes for 10 minutes, drain, cover and allow to steam for a few minutes.
  2. Add the marinade from the peppers and put into a warmed baking tray.
  3. Add seasoning to taste and the paprika and chilli and stir it all, ensuring a good mix.
  4. Place in a pre-warmed oven at gas mark 6 / 200 c / 400 f until the potatoes turn a nice golden colour.
  5. Add the peppers and ensure a good mix, then return to the oven for a further 5 to 10 minutes to complete the cooking.
