Stuffed Aubergines
Ingredients
- ½ aubergine
- drizzle of olive oil
- salt and freshly ground black pepper
- 1 garlic clove, peeled and crushed
- 30g/1oz roasted pepper, diced
- ½ lemon, zest only
- small handful of basil, shredded
- 1 garlic clove, peeled and chopped
- 55g/2oz halloumi cheese
- Score the aubergine in diagonal lines to form a criss-cross pattern.
- Drizzle with oil and season generously. Smear the garlic over the aubergine and then wrap in cling film.
- Microwave on high for two minutes.
- Place the roast pepper, lemon zest, basil and garlic into a bowl and mix together.
- Remove the aubergine from the microwave and unwrap the cling film once cool.
- Scoop out the inside of the aubergine and mix with the pepper mixture.
- Return the mix back to the shell to serve and grate the halloumi cheese over to finish.
